Chef Lauren first discovered her love of sailing during a dinghy trip in Greece at age 17. After joining her university sailing club, she began teaching in Sardinia, and the following summer she instructed children in Spain in sailing, kayaking, paddleboarding, and snorkeling. She now enjoys sharing this wealth of watersports knowledge with guests during their time on board. During the pandemic, Lauren had a fulfilling role working for the UK ambulance service, demonstrating her dedication and care for others.
Her love of food began in childhood, cooking alongside her mother, a fellow traveler. One of their favorite dishes to prepare together was a traditional Spanish paella, a recipe she still loves to share with guests. Lauren found the perfect opportunity to combine her passions for sailing and cuisine in the yachting industry in 2019, working in Croatia. Many seasons spent sailing and cooking in Croatia and Greece have shaped her fresh, Mediterranean-inspired cooking style.
Lauren is known for her Italian dishes and homemade focaccia, as well as guest favorites like her Sticky Honey Sesame Asian Chicken with Asian Slaw. Her culinary creations balance flavor, nutrition, and creativity, always tailored to guest preferences.
In the off-season, Lauren spent two winters running a luxury bed and breakfast in the French Alps, where she greeted returning skiers with fresh-baked treats after a day on the slopes. She has a natural curiosity for culture and history, often sharing stories and insights about the destinations guests visit. Warm and attentive, Lauren ensures guests feel truly cared for and creates a welcoming onboard atmosphere for both guests and crew alike.
Stew Ella is a highly motivated and personable steward, with a lifelong passion for watersports and over a decade of experience in high-end hospitality. With a background in elite client service, including her time working with a Royal Charter Ballet Company, Ella is dedicated to delivering an exceptional standard of service and going above and beyond to create unforgettable memories for guests.
Prior to joining The Moorings, Ella worked aboard a private motor yacht in the Mediterranean as a sole deckhand, stewardess, and nanny. She also sailed in Northern France and was part of the delivery crew for a 1937 sailing ketch to its new berth—an experience that deepened her love for life at sea.
A competitive rower since the age of 13, Ella brings her athletic spirit and enthusiasm to every charter. Her creativity, good humour, and professionalism shine through in everything she does, whether suggesting exciting excursions or crafting memorable moments for guests on board.
With a strong background in hospitality—including managing restaurants, acting as a brand ambassador, and leading service at weddings and festivals—Ella thrives in customer-facing roles. Her signature cocktails, the refreshing Limoncello Spritz and the classic English Bramble, are always a hit with guests, adding an extra touch of indulgence to their charter experience.

*A Moorings 5800 will be crewed by a professional captain and gourmet chef. For charters with more than 8 guests, an additional steward/ess may be provided however this is subject to availability.
